On this episode of MFP Live, Donna Ladd and Kimberly Griffin speak to Mississippi chef Nick Wallace.  Nick discussed his introduction to cooking from his grandmothers’ kitchen and how that has shaped his culinary techniques. Mixing his Mississippi roots with French culinary techniques, Nick elevated southern dishes into tasty creations that he calls “modern Mississippi cuisine”. They also discussed his dedication to giving back to Mississippi through his nonprofit, CreativityKitchen, which works with Jackson Public Schools to ensure children are receiving nutritious and delicious meals.  Nick has made a name for himself in the world of television cooking competitions, having competed on “Comfort Nation,” “Chopped,” “Cutthroat Kitchen,” “Firemasters,” “Unexplored America–Mississippi,” “50 States 50 Chefs,” and most recently, season 19 of “Top Chef.” In Mississippi, though, he has already established himself as a local favorite.
